The honest read

cast iron skillet

What independent testers and owner communities have said about cast iron skillets — their view, not ours. Read and written up on August 10, 2026.

Test kitchens land in different places on 'best overall.' Cook's Illustrated put the $200 Smithey No. 12 on top for searing, baking, and release, but named the plain Lodge 12-inch a Best Buy with equivalent performance for a fraction of the price. Wirecutter, after testing 16 skillets, went the other way and picked a Lodge as its favorite for being lighter and releasing food easily. Tom's Guide ranked an enameled Le Creuset first with a bare Lodge as a close, best-value second.

For enameled cast iron, America's Test Kitchen and Tom's Guide both point to Le Creuset's Signature Skillet, with a KitchenAid enameled pan called out as the cheaper Best Buy alternative. Both note that enamel never seasons into a true nonstick surface the way bare iron does, so it's judged on cleaning ease and no-seasoning convenience rather than release performance.

The Kitchn's hands-on comparison and a long-running owner forum thread both back up the lab findings from their own kitchen use: boutique pans like Field, Finex, and Smithey heat faster and feel lighter, and their smoother factory surfaces release food better out of the box, but a well-seasoned plain Lodge closes much of that gap over time and sears meat just as well in practice.

Where they agree

Lodge's plain 12-inch skillet is repeatedly the budget pick that performs close to pans costing several times more

Enameled cast iron never seasons into a true nonstick surface, so it's judged separately from bare iron

Heavier pans hold heat more steadily for searing but are harder to lift than lighter ones

Smooth-surfaced artisan pans release food better new, though a well-used Lodge narrows that gap

Where they don't

No agreement on the single best skillet: Cook's Illustrated crowned the $200 Smithey, Wirecutter and Tom's Guide favored a Lodge or Le Creuset instead

None of these sources ran controlled long-term testing on warping, rust resistance, or seasoning durability over years
